Chicken Quinoa Chili Cups

This recipe is a crowd pleaser for all ages. The crock pot chili recipe happily stands on its own served traditionally with cornbread or tortilla chips. Served in baked won-ton cups with a garnish of cilantro, twist of lime and dab of sour cream makes this an appetizer with a fresh creamy finish.


1 lb Chicken Breast, skinless

1 cup Sprouted uncooked Quinoa

2 cans Kidney Beans, rinsed and drained

1 can Black Beans, rinsed and drained

1 (28oz) can Crushed tomatoes (including Juice)

1 (15oz) can Crushed tomatoes with Chili (including Juice)

1 Tbsp Minced garlic

¾ cup yellow Onion, diced

1 ½ cup frozen corn (or 1 can, drained)

3 whole bell peppers, seeded and chopped (I use different colors - red, yellow, orange, green)

2 cups chicken broth

1 packet chili seasoning (or make your own)


Chopped cilantro, fresh lime, sour cream, additional seasoning

2 packages Won ton wrappers (~48 wraps each package)

Canola oil


Grease the inside of a large crock pot (5 qt.) with canola oil or cooking spray. In a small bowl add chili seasoning to chicken broth and mix. Add Chicken, quinoa, beans and vegetables to the crock pot. Pour seasoned chicken broth over the mixture. Add salt, cayenne pepper or any additional spices as desired for desired heat and flavor. Set Crock pot on High for 4 hours (if using frozen chicken, it may take longer).

Makes 9-10 servings (~12oz bowl)

15-20 minutes before chili is finished prep and bake won ton cups. Brush one side of won ton wrap with canola oil and press into mini muffin pan to form the cups. Bake in 350-degree oven for 5-7 minutes or until the edges are lightly toasted. Lift and reshape any cups that may have collapsed while baking right away. Set cups on cooling rack. Squeeze fresh lime juice over cups. Fill with a spoon of chili, arrange on a platter, sprinkle with shredded cheese, cilantro and add a small dab of sour cream to each.

Makes ~150 appetizers

Layer #1 of the crock pot. This is the chicken, quinoa, peppers, onion and garlic.

Layer #2 in the crock pot. This is the beans, corn, tomatoes. Then pour the broth and seasoning mix over it all and cook on High for about 4 hours.

One of my trays of won ton cups after they were baked. As you can see, a few of mine folded in but they are easy to fix as long as you do it as soon as they come out of the oven before cooling.
